Salad dressing base recipe with good oil
A good dressing needs no ready-made product. With the right oil, acid and a little seasoning it’s done in two minutes.

Oil and acid in balance
The classic vinaigrette roughly follows three parts oil to one part acid. The oil belongs cold, so cold-pressed oils with a good fatty-acid profile shine here.
Flaxseed or hemp oil bring omega-3, olive oil brings aroma. Important: do not heat.

Base recipe (for 2 servings)
Ingredients:
- 3 tbsp cold-pressed oil (olive, flaxseed or rapeseed oil)
- 1 tbsp acid (wine or apple vinegar, or lemon juice)
- 1 tsp mustard (binds and seasons)
- salt, pepper, a pinch of honey to taste
How to:
- 1. Whisk vinegar, mustard, salt, pepper and honey.
- 2. Slowly beat in the oil until it lightly binds.
- 3. Taste and pour over the salad only just before serving.
Tip
If you use flaxseed oil, use it fresh, it is sensitive and turns rancid quickly. A milder olive oil is more beginner-friendly. More on the suitable types and the smoke point in the cooking-oils world and the Lexicon.
