The principle
Oil takes up aromas
A good, mild olive oil takes up the aromas of herbs and spices. The result suits salad, bread or refining dishes.

Base recipe
Ingredients:
- 250 ml mild olive oil
- dried herbs (e.g. rosemary, thyme, oregano)
- clean, dry glass bottle
How to:
- 1. Bottle and herbs must be completely dry.
- 2. Add dried herbs to the oil, close.
- 3. Let steep cool and dark for one to two weeks, swirl occasionally.
- 4. Strain and use up promptly.
Important: safety
Putting fresh herbs, garlic or vegetables in oil can promote bacteria (botulism) under exclusion of air. Dried material is safer. If you use fresh ingredients: store in the fridge and use within a few days. When in doubt, throw it away. We give you the facts, the decision stays with you.
